Staying true to the team’s philosophy of creating spaces that respect the land, it was only natural that the site selection for Copperstone was guided entirely by the land. Co-founder of The Range Estates, Emma Lane, shares, “Rather than imposing a position, we spent time understanding how the landscape behaved, where the light fell, where breezes moved, and which vantage points felt most grounding. The home was placed to feel anchored and protected, while still opening outward to capture long views and a sense of quiet expansiveness.” Nestled in the Northern Rivers’ tranquil Bangalow, every detail of the impeccable five-bedroom home has been informed by the concept of ‘slow living’, offering guests a place to truly unwind and reconnect. For moments of connection, Emma shares that a variety of communal spaces were constructed to “offer different ways of coming together depending on the moment”, whether they be large gatherings, quiet conversations, or solitary reflection. “Each entertaining area responds to a different time of day, light quality, or mood. It gives guests the freedom to move intuitively through the space rather than being confined to one central zone,” continues Emma. Equally thoughtful was the decision to feature a walk-in robe, ensuite and private balcony for each of the guest rooms, offering an opportunity to soak in the serenity. A room the team poured plenty of love and attention into was the kitchen, which Emma describes as “very much the heart of Copperstone”. She explains, “It’s designed for gathering — functional but deeply inviting. It speaks to the way we imagine the home being lived in — unpretentious, social, and centred around food and connection.” ”Beyond the functionality of the spaces, the team were keen to craft something with just as much visual charm. Blending the star of the show, the Australian landscape, with classic European architectural influences was the aim, achieved via proportion, rhythm and material restraint. “We focused on natural, tactile finishes that would age gracefully — stone, timber, plaster, and metal with honest patina,” Emma explains. This also meant adding texture for depth and warmth to achieve a lived-in ambience. “We wanted the surfaces to invite touch and develop character over time”, she adds. Whilst the home is a masterclass in aesthetic harmony, it is the sense of ease the home creates that the team are most proud of — the slow living philosophy that prompted the project in the first place. “It doesn’t ask anything of you”, promises Emma, “it simply allows you to arrive, exhale, and be present. His Heidelberg dining room champions local makers and heartfelt cooking, transforming humble ingredients into plates shaped by memory and instinct. When you’re creating a new dish, what’s the very first thing you pay attention to — the ingredient, the feeling, or the story you want it to tell? I’m always looking for what story we can tell about the dish, the ingredients, and where they are sourced from. At the end of the day, we obviously eat to fill our stomachs, but we also do that because it gives us the opportunity to connect with each other through the stories we tell and share. You learnt to cook through instinct and memory. How can home cooks begin to trust their senses the way you do, rather than relying on recipes? I always work with one formula, and that is to trust your instincts, cook with your senses, and don’t overcomplicate. Cucina povera and your childhood in Punjab share a deep respect for humble ingredients. What’s one everyday ingredient you believe people overlook, and how would you bring it to life? People always overlook vegetables. We’re constantly fed the idea of vegetables being boring, but if you do them right, they can be delicious. I’ve seen people overlooking red cabbage. The way we use it is by cooking it with Granny Smith apple, fennel, brown onion, garlic, and a dash of balsamic vinegar. This way, it becomes the perfect side for any pork dish. Your menus shift with growers, weather and community. What’s the most surprising ingredient or seasonal gift that changed the direction of a dish, and what did it teach you? The most important lesson I’ve learnt with seasonality is that the quality of the produce is paramount. When you’re a young cook, you want to create and plate a dish that might have ingredients which are not in season, but you’ve decided to go ahead and put them on the plate anyway. The dish might look good for the eyes but not necessarily for the palate. Take a tomato when in season and grown ethically; all you need is fresh basil leaves, good cold-pressed olive oil, and locally sourced fresh buffalo mozzarella. A handful of ingredients, and you’ve got a pretty good dish. Little Black Pig & Sons feels built on feeling as much as flavour. What’s one piece of kitchen wisdom from your mother or Nonna Clara that you return to when you want food to carry heart? I remember the simplest and most delicious meal I’ve ever tasted in my life, Nonna Clara’s pasta e fagioli. She taught me to cook from the heart and smile while you do. We cooks have a very privileged role in this society to recreate memories and stories through a plate of food. For dinner inspiration, food trends and roundups of the most delicious new recipes, visit sitchu.com.au/recipes Explore More Recipes SITCHU MAGAZINE Burrata with Green Pea Purée and Sautéed Artichoke Serves 2–4 (as an entrée or shared plate) Ingredients Method Green Pea Purée 1 kg fresh green peas, shelled 3 cloves garlic 25 g Parmigiano Reggiano, finely grated Juice of 1 lemon Pinch of cracked black pepper Salt, to taste Extra virgin olive oil (as needed for texture) Artichokes 1 fresh globe artichoke 1–2 cloves garlic, lightly crushed Handful of fresh parsley, finely chopped Dash of red wine vinegar Extra virgin olive oil Salt, to taste To Serve 1 piece That’s Amore burrata cheese Fresh herbs (parsley or similar, optional garnish) Extra cracked black pepper Prepare the Green Pea Purée Bring a large pot of well-salted water to a rolling boil. Blanch the shelled peas for 2–3 minutes, until bright green and tender. Immediately transfer peas to iced water to stop the cooking, then drain well. Place peas in a food processor with: 3 cloves garlic Parmigiano Reggiano Lemon juice Cracked black pepper A pinch of salt Process but keep it chunky. With the motor running, drizzle in extra virgin olive oil until the purée is spoonable, and vibrant green. Taste and adjust seasoning. Set aside at room temperature. Prepare the Artichoke Trim the globe artichoke: Remove tough outer leaves. Peel the stem. Cut away the top third. Remove the choke. Cut the heart into quarters and keep in acidulated water (water with some freshly squeezed lemon) until ready to cook to avoid oxidation. Heat a generous splash of olive oil in a small pan over very gentle heat. Add crushed garlic and artichoke quarters with a pinch of salt. Cook slowly for 15–20 minutes, turning occasionally, until soft, lightly golden, and aromatic (they should confit rather than fry). Finish with: Chopped parsley and dash of red wine vinegar. Remove from heat and keep warm. Assemble the Dish Spoon a generous circle of warm green pea purée onto each plate, smoothing with the back of a spoon. Place the burrata gently in the centre of the purée. Arrange the sautéed artichoke quarters around the burrata. Finish with: Extra cracked black pepper. A drizzle of good olive oil Fresh herbs, if desired. 09
