ADVERTORIAL Sate Ayam (Balinese Chicken Satay) Smoky chicken skewers with a rich Indonesian peanut dipping sauce Prep 20 mins | Cook 20 mins | Serves 4 Ingredients Method For the Chicken 500g chicken thigh fillets, cut into bitesized pieces 4 French shallots, peeled 3 garlic cloves, finely chopped 1/2 tsp coriander powder 1/4 tsp turmeric powder 1/2 tsp white pepper 2 tbsp ABC Sweet Soy Sauce (Kecap Manis) 2 tbsp soy sauce 1 tsp lime juice 1 tbsp coconut oil Bamboo skewers, soaked for 1 hour Peanut Sauce 2 garlic cloves, finely chopped 1 tbsp of coconut oil 1/2 cup peanut butter 1/4 cup coconut cream 1/2 cup water 1/4 cup ABC Sweet Soy Sauce 1/2 tsp salt 2 tbsp lime juice 1 tsp ABC Original Chilli Sauce, optional To Serve Cooked jasmine rice Fried shallots Prawn crackers Sliced cucumbers Lime wedges ABC Original Chilli Sauce (Sambal) Start by making the spice paste. Add the shallots, garlic, coriander powder, turmeric and white pepper to a small food processor and blend into a smooth paste. In a small pan over medium heat, add the oil and cook the spice paste for 2–3 minutes, stirring continuously, until fragrant. Remove from the heat and allow to cool slightly. In a medium bowl, combine the chicken, soy sauce, ABC Sweet Soy Sauce, lime juice and the cooled spice paste. Mix well to coat, then cover and marinate for at least 20 minutes or overnight. Once marinated, thread the chicken onto skewers. Preheat a grill pan, BBQ or hibachi grill over high heat. Cook for 8–10 minutes, turning regularly, or until cooked through. Brush with extra marinade while cooking for a glossy, caramelised finish. To make the peanut sauce, place a small saucepan over low heat. Add the coconut oil and garlic, and cook for 1 minute or until fragrant. Add the peanut butter, coconut cream, water, ABC Sweet Soy Sauce, salt, ABC Original Chilli Sauce (if using) and lime juice. Cook, stirring continuously, until smooth and slightly thickened. To serve, arrange on a large platter with warm peanut sauce. Serve with rice, prawn crackers, cucumber, lime wedges and extra chilli sauce.
