I don’t use too much flour in the rolling or sheeting process as it affects the texture of the pasta sheet. Tell us a little more about the cuisine of Turin. Turin, the capital of Italy’s Piedmont region, boasts a cuisine that truly reflects the territory. Renowned for Piedmontese beef, venison, and cheese (Castelmagno, Robiola, and Fontina), as well as white truffles from Alba, its dishes offer rich, earthy flavours. One of the staple pasta recipes from Piedmont is the agnolotti del Plin, a smallsized stuffed pasta filled with vegetables and braised pork and veal. The juice from the braising process is used as the pasta sauce. Another staple pasta dish is the Tagliolini al Tartufo d’alba, which we typically enjoy in the autumn months in Italy, with truffle season beginning in October. Fonduta di formaggi is another famous Turin dish that I love. It is a very simple dish — a melted mix of local cheeses, used to dip with bread (or eaten with a spoon). The dish is influenced by French cuisine. What’s one of your favourite dishes to cook in autumn? Risotto al Nebbiolo e toma is a dish I love to cook in autumn. It incorporates Turin local cheese, toma, and the rich flavours of the autumnal wine Nebbiolo. Typically, in a recipe, eggs are ratioed to the flour. Instead of counting the eggs, I use their weight for a more precise weight ratio.
