SITCHU MAGAZINE When Jacqui Midgley first purchased her new home, a classic Californian bungalow in Melbourne’s Brunswick East, she had one clear goal — for it to be a place where she could entertain all year round. “When we bought the house, it was a large two-bedroom, well-maintained 1930s Californian bungalow with a big garden and an ‘80s style kitchen, bathroom, and ‘leanto.’ It felt like a warm family home that just needed some love and style put into it,” recalls Jacqui, the creative force behind the BuildHer Collective. Jacqui wanted to extend the floor plan into more bedrooms and open up the home’s flow with a kitchen-living space featuring a butler’s pantry, a new laundry room, a second bathroom, and a second living space. The renovated home’s design style is rooted in Japandi aesthetics, a blend of Japanese minimalism and Scandinavian functionality. “The original brief was to adopt a Japandi style,” explains Jacqui. “The design intent was always centred around the fundamental objectives of maximising natural light, using warm tones and texture, and connecting to the landscape. We chased natural light as we were cognisant on a south-facing block.” Architect Sarah Bryant of Bryant Alsop played a pivotal role in this aspect, suggesting a central courtyard to draw in northern light and connect the interior with the landscape. The decision to renovate was driven by its prime location and massive potential. “We loved the plain tree-lined street, and the block had good access and felt generous. We knew we could add value to this oversized twobedroom house without going up. We wanted to restore its former glory at the front and open the back to create a strong connection to outdoor entertaining areas,” says Jacqui. Aside from the structural changes, the biggest player in the home’s transformation was using bright, uplifting colours and maximising natural light. Fenton & Fenton founder Lucy Fenton used this as a springboard for inspiration when it came to styling the space. “Understanding how light would impact the colours in the space was important. The home was flooded with natural light, so we wanted it to feel like sunshine and introduced a sunny palette that would transcend the seasons,” Lucy explains. “These vibrant and cheerful hues bring warmth and positive energy into the home. It was Fenton & Fenton’s vision to embrace nature’s palette from sunrise to sunset with sunny yellows, golden warmth, and crimson corals through to the vibrant twilight colours and create a welcoming and comforting mood. And, it did this in spades,” Lucy adds of the dopamine-inducing colour palette. Among the many standout features of the home, homeowner Jacqui loves the breezeway that links the old and new sections. “There are a few ‘wow’ moments within the design, but the breezeway delineating the old from the new is my favourite. It’s quite magical; the timber soffit builds on the anticipation of what you are arriving at the back with the raked ceiling and exposed beams, and it’s striking. Also, the afternoon light projects the shadows of the landscape onto the polished concrete here, creating visual interest.” When it comes to her favourite spots, she can’t resist the cosiness of the living room, flooded with natural light, offering the perfect sanctuary to nestle into the luxurious Roommate Sofa by Fenton & Fenton. “I also love the gallery wall with artworks by Nunzio Miano, Denise Hojdyssek, Clare Dubina, Ellie Malin, and Lily Platts, which really adds energy to the space. All the decorative accents like cushions, sculptures, and Ziggy stump complement the chosen artwork,” she points out. Another major source of inspiration was the vibrant suburb of Brunswick East. “I love the creativity and progressive nature of the area. I have watched the continued gentrification of the area over the last nine years, and it has a young energy about it.” Renovations rarely come without challenges, and this project was no exception. “Of course, there were various challenges, namely having to revisit selections when finishes had long lead times. This was actually a positive challenge, as we had initially selected the finishes in mid-2021, so we needed to review our decisions along the journey as trends moved.” Despite the hurdles, the most exciting part for Jacqui was the creative process. “I loved sourcing different finishes and building on the warm palette. FOR THE FOODIES The recipient of the NSW’s Regional Chef of the Year title in 2022, Anthony Fullerton heads up the kitchen at Tower Lodge, one of the Hunter Valley’s most luxurious stays. His commitment to crafting an authentic farm-to-table menu ensures a fine dining experience like no other. What do you love most about your current role leading the team at Tower Lodge? I love having the ability to control the produce that we use from the farm to the final plated creation that our guests get to enjoy. For a chef to be involved in the production of beef, from the farming practice to the finished product, to then being able to look at maximising the use of the full carcass across the menu is really special. I’m constantly thinking about new ideas and ways to be creative with my dishes. When it comes to cooking with seasonal ingredients, where do you start? For me, it’s about the protein first then the accompaniments. Our Nioka Black Angus Farm plays a pivotal role in the menu as we look at full carcass utilisation, giving us an array of ideas for the menu. Then we build around this with other proteins from our boutique farmers and suppliers, as well as seasonal fruit and vegetables from our gardens and local producers that marry with each item. Are there any particular flavours you find yourself drawn to during winter? Winter means truffles. Lightly blanch the pencil fennel for one minute, remove it, refresh in iced water, drain, and dry. Add the fregola to the boiling water and cook until al dente. Drain and coat with extra virgin olive oil. Add two tablespoons of extra virgin olive oil, sliced leeks, and diced shallots to melted butter in a saucepan. Sauté together until soft and butter is absorbed without colour. To Cook Heat your oven to 200 degrees Celsius. Take your Aquna Murray Cod and, lightly coat it with extra virgin olive oil and season it with pink salt. Place a non-stick frypan on medium heat, and place the fish skin side down. Slowly cook to a crisp as the pan increases heat. Once crisp, turn and lightly seal. Place fish onto a lined baking tray and cook for 5-10 minutes until cooked, depending on the thickness of your fillet. Place pencil fennel onto a lined baking tray, lightly oil and salt, and cook in the oven for 5 minutes until lightly coloured. In a saucepan, add the leek and shallot mix and warm. Add fregola and lobster bisque, then boil and simmer until the liquid is absorbed into the fregola. Add chopped parsley, tomberries, sumac and pink salt to taste. To Finish Warm four plates. Place the fregola in the centre of the plate in a flat circle, top with three pencil fennel. Top with the Aquna Murray Cod, and drizzle with lemon extra virgin olive oil. In his most recent collaboration, he brought his expertise to the forefront, creating a vibrant and sophisticated urban-inspired sanctuary in his family’s farmhouse using the Dulux Colour Forecast Muse palette. “Any room works for bold colour choices— don’t limit yourself!” Jono shares. “In my recent design makeover, I transformed the master bedroom with vivid and bold colours, but I also love incorporating colour throughout living spaces, hallways, and even kitchens.” His approach often involves painting smaller spaces in bolder hues, using rich textures to elevate the room without making it feel cramped. In this makeover, Jono embraced the Dulux Muse palette, a collection inspired by nostalgic textures and bold hues. “Brown shades are trending heavily through interiors and fashion right now. Dulux Fantan, Tuscan Sunset, and Guitar are perfect for introducing warmth and sophistication,” he says. Jono used Dulux Fantan on the walls, accentuating with Dulux Canyon Cloud on window edges, Dulux Passionate Blue on mirrors, and Dulux Fluorescent Fire on a side table — demonstrating that bold, unexpected combinations can create stunning visual interest. When choosing bold colours for different rooms, Jono emphasises the importance of the emotional response to colour. “Think about how you use the space and how that reflects in your colour choice. Bold colour doesn’t have to be limited to walls; ceilings, architraves, and window trims can also create bold design moments.” Jono cautions against common mistakes, such as overmatching decor to paint colours. “A pop of red in a cushion, rug, and vase can draw the eye to the wrong focus. Instead, go for complementary tones rather than being too matchy-matchy. Pops of colour can be tricky to get right.” For harmonious bold colour combinations, Jono recommends starting small and looking to the Dulux colour trends. “They’ve done the heavy lifting, and it takes the risk out of decision making. It doesn’t always have to be as permanent as paint on walls. Try adding curtains or large-scale pieces like artwork and rugs for big pops of colour without too much risk.” Jono advises layering in natural materials or metals to complement and enhance bold colour schemes. “This gives a bit of breathing room to the colour saturation and adds an additional layer of design detail.” Jono suggests starting with smaller decorative objects or midtone colors for those hesitant to dive into bold colours. “Add paint to smaller items or discover colour through stunning art pieces. Another great way to introduce colour is through curtains, allowing you to see a block of colour on an entire wall with the flexibility to change it.” Integrating bold colours into an existing style without clashinginvolves scanning your space for existing colours and introducing complementary shades. “Apply paint to all four walls, create a feature wall, or add colour to doors and window frames. This helps create a cohesive and intentional look using colour,” he explains.
