SITCHU MAGAZINE Location often shapes great design, but the most memorable homes aren’t confined by their postcode. That’s certainly true of Hey Darling House, a Victorian terrace tucked into the heart of Rozelle that could just as easily exist in a bucolic rural landscape, thanks to its elegant French country kitchen, or feel at home in London’s fashionable Bloomsbury, courtesy of a hidden, hyper-modern cocktail corner (more on that later). For Mariah Burton, Director and Co-Founder of award-winning design studio Folk Studio, these unexpected contrasts—not grounded in place—were a key design focus. “Hey Darling House is light-filled, open and gently washed in pinks and blues,” she notes, defying “the expectations of inner-city living”. “In Rozelle, where Victorian terraces typically reveal sharp lines, dark corners and restrained, tonal palettes, interiors often mirror the pace and density of their urban surroundings. Our aim was to redefine what a typical Victorian terrace feels like and, in doing so, create a fun, vibrant family home that is full of light,” Mariah continues. Designing for longevity was equally important. With the clients planning to expand their family—and welcoming their first child during the design phase—the brief centred on a home that could evolve alongside them. The team focused on ensuring the design would remain practical, robust and timeless as the family’s needs changed. As is often the case with heritage homes, balancing its history with contemporary living became one of the project’s defining challenges, with materiality ultimately providing the bridge between old and new. “Our aim was to redefine what a typical Victorian terrace feels like and, in doing so, create a fun, vibrant family home that is full of light.” — Mariah Burton 03
04 HOME TOUR Throughout the project, Mariah and the team celebrated the home’s original character while introducing contemporary touches. “Rather than removing or altering the home’s heritage features, we chose to celebrate and enhance them. In the library, painting the ceiling a soft pink draws the eye upward, beautifully highlighting the intricate traditional cornices and original ceiling rose,” she explains. “This thoughtful design decision allows the architectural details to become a focal point, demonstrating how contemporary colour can work in harmony with heritage elements.” Colour, rich texture and form were explored to bring a light, airy and playful aesthetic to the Victorian bones of the inner-city home. “Often you see Victorian terraces lean into a more traditional palette and style,” she shares. “We wanted to play with this and explore colour with some traditional materials, like marble and aged bronze, in a more contemporary way.” Considered lighting, both natural and artificial, further introduced softness and interest, with “the sheer curtains providing fluid movement into an otherwise traditional masonry home.” Mariah adds, “The wall lights were seen as lit sculptures, rather than just performing a function—they create mood, and a calm atmosphere throughout. They were placed to illuminate otherwise dark corners, and to highlight details and finishes.” Moments of surprise are thoughtfully woven throughout the home— namely, the hidden bar and pink powder room—adding an element of playfulness and discovery that unfolds as you move throughout the house. Mariah refers to them as “jewellery boxes”, with the unexpected reveal offering “a playful contrast to the surrounding spaces, transforming everyday moments into experiences of discovery”. She spent years as Head of Creative for hospitality group Fink, shaping the profiles of Quay, Bennelong and chefs like Peter Gilmore and Lennox Hastie. Then, her Saturday night pasta ritual, born from a need to quiet an anxious mind, grew into a full-blown movement. Three cookbooks and a pantry range later, her latest book, Home Food, is all about cooking that restores rather than depletes. Your new book Home Food is built around real lives, so what does dinner look like in your house on a typical weeknight? With a 3 and a 6-year-old: chaotic! Some nights it’s a beautiful pasta dish that I’ve thought all day about, other nights it’s something thrown together because everyone is tired and hungry. There’s a lot of pasta, one-tray meals, chicken, mince, canned beans and meals where I can prep something quickly and then get on with the evening. I’m a big believer that feeding people well doesn’t need to mean making something elaborate every night. How did living in Piedmont Italy, shape your approach to cooking? I lived there for a year studying my masters, and it was where I really understood the role food plays in everyday life. That cooking isn’t about perfection or performance; it’s about connection, generosity and bringing people together. That Italian approach still shapes everything I do. I love food that feels generous and achievable. I’m not interested in complicated recipes for the sake of it; I’m interested in food that makes people want to get into the kitchen and cook. Food for the soul. What’s the biggest mistake people make cooking pasta at home, and what’s the fix? I think people underestimate the importance of the pasta water. That starchy, salty water is what helps bring the sauce and pasta together. The fix is simple: salt your water properly, cook your pasta until it’s molto al dente, and always finish your pasta in the sauce rather than just pouring sauce over the top. That final minute of cooking is where the magic happens. If you could teach home cooks one foundational skill, what would it be? Taste as you cook. It sounds obvious, but learning how to adjust seasoning, acidity, salt and texture is the thing that takes someone from just following recipes to actually cooking. SITCHU MAGAZINE Zozzona Pasta with pork and fennel sausages Serves 2-3 Ingredients Method 1 tablespoon olive oil 60-70 g (2¼-2½ oz) guanciale or pancetta, cut into lardons (or batons) 150 g (5½ oz), about 2, pork and fennel sausages 2 garlic cloves, finely chopped 2 tablespoons tomato paste (concentrated purée) 1 × 400 g (14 oz) can whole tomatoes ½ teaspoon salt ¼-½ teaspoon freshly ground black pepper dried chilli flakes (optional) 200-250 g (7-9 oz) short dried pasta such as rigatoni mezzi, paccheri or rigatoni 2 egg yolks ¼ cup (25 g) grated Pecorino (preferably, but Parmesan will work too), or to taste Place a large, deep frying pan over medium-low heat. Add the olive oil and guanciale and fry slowly until golden and crisp (about 8-10 minutes). Scoop out with a slotted spoon and set aside. Pour the rendered fat into a small bowl, leaving about 1 tablespoon in the pan. Increase heat to medium. Squeeze the sausage out of its casing into little nuggets, no larger than 1 cm (½ inch). Fry, undisturbed, for 1 minute, then fry the other side for another minute until they’re nicely golden. Add the garlic and tomato paste and cook for about 1 minute, then add the tomatoes, breaking them up with the back of a spoon. Season with salt, pepper and dried chilli, if using. Reduce the heat and let the sauce gently simmer, stirring occasionally, until it thickens slightly (around 10 minutes). Meanwhile, bring a large pot of salted water to a rapid boil. Cook the pasta until it’s well shy of al dente— about 3 minutes less than the packet instructions. The plan is to finish cooking it in the sauce. In a small bowl, whisk together the egg yolks, Pecorino, and 1 tablespoon of the reserved guanciale fat (discarding the rest). Drain the pasta, reserving 1 cup (250 ml) of the cooking water. Add half the cooking water to the pan and toss the pasta through the sauce. Cook over medium-high heat for about 1-2 minutes, adding more pasta water as needed to keep the sauce loose. Stir ¼ cup (60 ml) of the reserved pasta water into the egg yolk mixture. Remove the pan from the heat. Add the cooked guanciale and egg yolk mixture to the pasta, tossing rapidly to combine.
