HOME TOUR 02 Byron Beauties Redefining luxury group stays, Bunker Byron and Banks at Byron are two distinct new properties in the heart of Byron Bay, showcasing a seamless blend of style, wellness, and sophistication—and elegantly elevated through a collaboration with King Living.
SITCHU MAGAZINE Often, the best ideas stem from personal experience, and that’s exactly what happened 11 years ago when Krystal and Neil Hipwell were planning their wedding in Byron Bay. Struggling to find suitable accommodation for large groups of family and friends, they saw an opportunity. “We discovered a notable absence of options in the heart of Byron that could host large groups wanting to celebrate together,” Krystal says. This gap sparked the beginning of their journey toward creating Bunker Escapes, a brand designed for large families and friends to create lasting memories under one roof. That’s where Bunker Byron and Banks at Byron come in: two stunning luxury properties under the Bunker Escapes brand, created by Krystal, director of Bunker Escapes, and Neil, director of the award-winning design and construction company Futureflip, to revolutionise group travel accommodation. In 2022, the husband-wife team took the ultimate leap of faith and purchased the property for Bunker and Banks without seeing it in person. “We relied solely on an aerial image,” Krystal admits. “We were confident that the location was perfectly suited to our vision.” However, once they arrived on-site, it became clear that the existing house was beyond saving. Instead of salvaging the original structure, they demolished it and started from scratch. The Hipwell family relocated to the property for nearly eight months, living in a caravan with their three children and later a tiny house amid a bustling construction site. “This decision was undoubtedly one of the most audacious we have made,” Krystal reflects. “Embarking on a new life in a town where we knew no one, living on-site throughout the build, was a challenge.” The luxury residences were completed in just ten months, and by August 2024, Bunker Byron and Banks at Byron officially opened their doors to guests. “It has been really exciting to see our dream come to life and to provide a welcoming space for people to come together and create memories that last a lifetime,” says Krystal. Though both properties share a common ethos—celebrating comfort, community and wellness—Bunker Byron and Banks at Byron were designed with distinct aesthetics in mind. Bunker Byron, described by Krystal as “masculine, minimal, bold,” features sharp angles, off-form concrete, and a striking palette of black and brass fixtures softened by green accents. It’s a design that makes a punchy statement while still embracing Byron’s relaxed coastal feel. Meanwhile, Banks at Byron was designed to embody a more “feminine, luxe, coastal” vibe. High ceilings, soft furnishings, and gentle curves dominate the space, creating a light and airy ambience that feels both elegant and inviting. “Each property showcases distinct aesthetics,” Krystal says, “yet both exude an inviting and homely feel.” Another important touch to making the spaces aesthetically stunning and comfortable was the inclusion of King Living furniture. “Comfort is paramount for creating a memorable and enjoyable stay for our guests, and these pieces have played a significant role in bringing both properties to life.” Most notably, the curves of the 1977 Sofa perfectly complement the spiral staircase at Banks, while the deep green Zara Sofa and Antipodes Organic Rug add a textured element to the Bunker residence. Beyond aesthetics, the Hipwells have placed a strong emphasis on wellness. The properties are equipped with a gym, yoga studio, infrared sauna, spa, and even ice baths—offering guests a comprehensive wellness experience without needing to leave the premises. “This was a deliberate decision to create an environment where guests can focus on health and relaxation. “We want to provide our guests with a holistic experience,” says Krystal. “Our guests can indulge in luxury while focusing on their well-being.” What sets Bunker and Banks apart from other properties in the area is their ability to accommodate large groups while offering the intimacy of a private home. With fully equipped kitchens, expansive dining areas, and beautiful outdoor alfresco spaces, the properties were designed for entertaining and bringing people together. “The spaces are infused with a sense of sophistication and comfort,” Krystal explains. The response has been overwhelmingly positive, with one recent guest raving: “The King Living mattress was incredible; as someone who often struggles with sleep, I was surprised to have such a restful night. FOR THE FOODIES Anthony Femia has been delighting cheese lovers far and wide since opening up Maker & Monger in Melbourne’s Prahran Market. A cheesemonger by trade (and an internationally recognised one at that), he regularly jets off on cheese-foraging trips around the world and is a master in both Comté and charm. What are your top three cheese and wine pairings? Blue cheese with botrytis wine is a heavenly combo—the spice and salt of the cheese perfectly balance the wine’s richness. I love adding fresh honeycomb to elevate the experience. Another favourite is French Camembert with oaked Chardonnay. The cheese’s cauliflower and garlic notes blend beautifully with the creamy vanilla tones of a good Chardonnay. Lastly, Champagne with triple cream brie is a classic pairing—the bubbles cut through the brie’s richness, and the cheese’s buttery tang pairs seamlessly with a fine Champagne. What are your favourite seasonal cheese dishes for spring? Spring’s fresh vegetables are perfect for simple, flavourful dishes. During this fellowship, I stayed with amazing cheesemakers and affineurs across France, England, and Vermont, USA. This experience gave me the vision and drive to create a shop celebrating all things cheese. Today, we also offer dairy products, accompaniments, great wines, and of course, toasties! My love of cheese stems from childhood, spent “working” with my mum behind the counter at our local deli. There, I learned the stories, history, and how to recognise the flavors of cheese. Use this mixture to butter one side of each slice of brioche. Make the Béchamel: Gently warm the milk with the bay leaves and shallot in a saucepan. Once steaming, remove from heat and let it infuse. In another saucepan, melt the cold butter over low heat. Add the flour and stir to make a roux. Cook for 2 minutes, stirring constantly. Strain the milk, then slowly add it to the roux, stirring in figure eights until smooth and velvety. Continue adding milk gradually. Once thickened, add the Comté a handful at a time, waiting for each batch to melt before adding more. Stir in freshly ground pepper and remove the bay leaves. SITCHU MAGAZINE Transfer the béchamel to a dish, cover it with cling film to prevent a skin from forming, and refrigerate for at least one hour. Assemble the Toasties: Spread about 100g of the chilled béchamel on one slice of brioche (with the butter mixture on the outside). Top with another slice, also butter-side out. Grill and Serve: Place the toastie in a preheated sandwich press, using baking paper to prevent sticking. Grill for two-three minutes, until golden and crisp.
