SITCHU MAGAZINE For Alanah and Elle Giuliano, co-founders of interior design studio Twostyle, every project they work on is a labour of love. But none more so than the recent renovation of Alanah’s own West Melbourne home. Both a family retreat and live portfolio piece, this special project was a distillation of the studio’s signature blend of organic warmth and bold personality. The three-bedroom residence exemplifies Twostyle’s commitment to finding the balance between organic neutral and more-is-more. Exploring the harmony between Twostyle’s two defining design directions, Alanah notes that in her “dream project”, “you’ll see that balance play out in the kitchen, where the travertine and soft beige tones are paired with two contrasting stones to create subtle tension and depth. It’s that mix of restraint and expression that feels so us.” Keen to create a home that was “fun yet calming, and completely inviting” was both the goal and the biggest challenge. Both bold design choices and livability were the aim. “It’s easy to go all-in on statement features, but we wanted the home to also feel calm and cohesive. We achieved that by layering textures and colours in a curated way so that each space has its own identity while still flowing beautifully into the next”, shares Alanah. Another priority was creating a home that felt “warm and layered, yet still refined” which meant plenty of planning went into the structural elements of the renovation. Alanah explains, “As the project evolved, it became about creating a space that felt lived-in and soulful, but also curated and intentional.” This included the soaring ceilings crucial to the overall vision. Chosen to “completely transform the sense of space and light. They made the whole home feel so much more open and calm.” Adding curves throughout was another structural element that the pair felt was crucial to the finished product. “Curves always soften a space”, shares Alanah. “The home’s exterior has quite a strong, industrial feel, so we wanted to balance that by bringing softness and flow inside. The curves add a calmness and femininity that make the home feel more welcoming.” With an abundance of natural light to play with, the Twostyle team reimagined the floor plan to channel it into the home’s key living spaces — enhancing flow, connection, and a welcoming sense of warmth. Design extremes were not just relegated to colour and included the textures used throughout the build. On their selections, Alanah shares, “Travertine and Calacatta marble were key materials, along with bold stone that still feels calming”. Layering texture, she notes, “is what brings a sense of depth and comfort.” It was this use of texture that accounts for Alanah’s favourite details. She gushes, “I’m obsessed with the bullnose edge detail and the double-stone benchtop, the textures and craftsmanship make it such a standout moment. It’s functional, but it also feels like a piece of art.” And to top off the textured renovation? A series of curated colourful furnishings “to keep it feeling vibrant and fun.” When reflecting on the unique opportunity to renovate her own home, Alanah shares, “It was a chance to showcase our signature blend of organic neutrals and daring, more-is-more moments. Every detail was intentional, from the curved lines softening the industrial exterior to the double-stone kitchen bench that really pushes boundaries. It’s a home that tells a story about who we are as designers, and how far we’ve come as a studio.” She continues, “Designing for clients is amazing, but to come home every day to something that embodies my own vision is another level. New Zealand–born chef Tom Cleland leads the kitchen at Potts Point favourite Dear Sainte Éloise, where his love of seasonal produce and thoughtful, low-waste cooking shapes every dish. What inspired you to become a chef? My grandparents were beyond selfsufficient, growing and farming their own food — I absorbed everything from them. The way in which they used each ingredient in most efficient way possible was so interesting to me, which is why I’ve always been big on sustainability in the kitchen throughout my career. Which spring ingredient or dish has you grinning right now, and why? It’s coming towards the end of the season, but radicchios are so beautiful right now. I also think it’s a hugely underrated flavour, especially when paired with citrus. The other thing I’m really excited about is the Kinross Station lamb, which we’ve just got on the menu for our new Sunday roast. It’s full of flavour and I think it’s the epitome of springtime. You’ve launched a Guest Chef Series at Dear Sainte Éloise, collaborating with chefs such as Tom Bromwich, Wesley Cooper Jones, and Jez Wick for one-off menus. What excites you about these takeovers? I love learning more about other chefs’ styles and approaches. Getting to chat to them about how their minds work, new ideas, how they meld flavours together, the techniques they use; it’s energising. Tom Cleland’s Top 3 Sydney Restaurants: 3. What’s one technique or ingredient you recommend for home cooks to elevate their desserts or seasonal cooking? Firstly, my advice would be to invest in a sharp knife. Blunt knives are my biggest gripe, and there’s no point using them as you’ll damage your lovely produce — it’ll last longer if it’s been cut cleanly. I’d also recommend preserving fruit in a simple sugar syrup. You can then have jars handy to add to cakes, enjoy with cream or ice cream, or on your morning yoghurt and granola too. oldtownhongkongcuisine 2. For dinner inspiration, food trends and roundups of the most delicious new recipes, visit sitchu.com.au/recipes Explore More Recipes SITCHU MAGAZINE Ingredients Method 1 fish head and frame, or 200g fish fillet 1 litre water 400g peeled russet potatoes 50g chopped capers 50g diced cornichons 1 bunch of dill 1 bunch of parsley Salt Pepper 2 eggs 2 tablespoons of milk 1 cup plain flour 1 cup panko 1 tablespoon fennel seeds 1 litre vegetable oil Add the fish fillet or head and frame to a pot of water, and poach, keeping the water just under simmering. This should take 15 minutes or so. Remove the fish and set aside. Add the potatoes to the same pot of water, and cook for 20 to 30 minutes, or until tender. Remove the potatoes and mash in a large mixing bowl. Mix in the capers, cornichons and herbs, leaving a few sprigs of both parsley and dill aside for the garnish. Next, flake the fish into the bowl with the potatoes, mix thoroughly and season with salt and pepper. Once the mixture has cooled enough to handle, roll into golf ball sized rounds. Meanwhile, whisk two eggs with a splash of milk in one bowl, tip the flour into a second bowl, and the panko and fennel seeds into a third bowl. Working with one wet hand and one dry hand, flour your fish balls, tapping off excess flour. Then dip into the egg wash, coating thoroughly, before rolling in panko and fennel seeds. Heat oil over medium/high heat (175 degrees) and carefully fry the fish balls until golden, working in batches. Serve with the remaining fresh herbs, along with a sauce of your choice.
