HOME TOUR 02 Grounded Luxury A deeply considered retreat where coast and forest converge to reimagine the holiday home as a timeless experience.
SITCHU MAGAZINE Perched on one of the continent’s most easterly blocks, ESTE Estate is not your average holiday home. An artfully designed residence nestled between littoral rainforest and the coastal expanse of Wategos Beach, it manages to achieve the rare feat of balancing standing out with blending in. Cleverly configured across multiple levels, it offers the flexibility to be enjoyed as a single, expansive retreat sleeping up to sixteen, or as two independent wings — north and south — each with three bedrooms. Thanks to Shaun Lockyer Architects, who embraced the opportunity to create an unforgettable retreat, the estate reimagines the beachside interlude as something truly extraordinary. The primary aim of the design was to “embrace the best of the ocean as well as the bush and the littoral rainforest that surrounds the back of the house”, shares Principal Architect Shaun Lockyer. A place where guests could “come to Byron Bay and enjoy a really, really special environment, both built and natural, that would be memorable in such a way that they would want to come back and do it again and again”. More than a mere one-and-done stay, the team designed the build so that, “in the fullness of time, we hope the people who go back there get to experience something that feels quieter and quieter for their familiarity with the building, but richer and richer in experience for the memories that they create there and the sort of backdrop that the building provides to those memories.” Harnessing the full majesty of the views at every opportunity was paramount from conception through to construction. Shaun shares, “tucking the house tightly into the hill and creating a lot of vertical proportion in the building” allowed the team to create a wonderful range of spaces across four levels, despite a small footprint. With ESTE destined to become a luxury retreat, considerations were made to maximise guest experience. Shaun explains, “It’s really about heightening the experience of being there for a short, intense and very special time, meaning that bathrooms and robes are open to the bedroom so that there’s this kind of lovely resort feel.” This philosophy extended to the living areas, which “are beautifully open plan and enjoy incredible views” in a “combined social living aspect”, he continues, referencing the rooftop pools and terraces. It was many of these living areas, dotted throughout, that remain favourite features, including the courtyard that sits in the cooler part of the site, enabling guests to enjoy the rainforest as well as a touch of respite from the heat. Key to the overall vision of crafting a space designed to be adored year after year was texture and materiality, Shaun explains. “In all of our work, we like the idea that materials are matte in finish, not shiny, that they are textured, that they are tactile, that they are imperfect and that they talk about the character of the place, but also the spirit of how we ourselves age, and how we get older. We become perhaps aesthetically less perfect but richer through the character that we develop. And I think buildings are the same. So we’re very conscious of designing a building that embraces that, as it gets more mature and the landscaping matures, and it develops the patinas and the evolutions of material colour change and even just the passage of time on the building.” He continues, “We don’t see these buildings as pristine white objects in the landscape. We imagine them to be these beautiful, rich, textural buildings that grow old gracefully and settle into the landscape the older they get.” With ESTE designed to inspire connection, create memories and get better with time, it comes as no surprise that the part of the project that Shaun is most proud of was the resulting relationships. Firstly, that with the owners and clients. “At the end of the day, these are challenging, long, expensive, time-intensive and emotionally intensive processes”, he shares. “I think the fact that we’ve come through this journey with two amazing clients, Chris and George, and Andrea and Angela, we’re just thrilled that they are as excited about the outcome as we are, that we’re great friends, that we feel like we’ve collectively contributed to a shared vision, and we have lived through a shared journey and ultimately the building is better for our collective contribution to it.” And finally, with the “real sense of engagement with the landscape”, assures Shaun, “I think relationships are ultimately the most meaningful things in our lives, and this project is a great example of that.” Ready to Discover ESTE Estate? Meet Alessandro Mandelli, the Italian-born chef turning Bistro Ebony into Sydney’s chic new flavour playground. He brings European polish without pretension, creating dishes that feel both comforting and beautifully composed, the way only a steady hand can deliver. As the Executive Chef of new venue Bistro Ebony, what’s one dish on the opening menu you’re especially excited for people to try — and why? The fregola is the dish I’m most excited for people to try. It’s a pasta you don’t often see in Sydney — toasted semolina paired with the sweet flavour of spanner crab, crunchy softshell crab and a hit of bottarga, all cooked down in a rich lobster bisque with confit tomato. For me, it shows just how much depth and character a simple, thoughtful combination of ingredients can have. What’s your favourite summer dish to cook at home — something quick, fresh and full of flavour? My go-to summer dish is spaghetti vongole. It’s incredibly quick, full of flavour and always feels like a treat, especially if the clams are cleaned ahead of time. I like to take it straight to the table in the pan with crusty bread and a chilled Italian white wine — it brings instant holiday energy. Tableside desserts are having a moment — can you share the story behind the crêpes suzette? What makes that kind of old-school theatre so fun? Tableside desserts create a sense of theatre and a moment of connection — guests get to see how something is made, chat with the person preparing it and feel part of the experience rather than simply receiving a plate. Crêpes suzette ticks every box: 5 Minutes with Alessandro Mandelli Executive Head Chef at Bistro Ebony Mr. Wong A favourite — consistent, generous and full of big flavour. Alessandro Mandelli’s Top 3 Sydney Restaurants: 3. the sweetness of caramel, the freshness of orange and the joy of a warm pancake. The little burst of flame adds to the occasion, and the dish fits naturally into our French-leaning menu. We use Grand Marnier for the flambé because it’s more rounded and complex, bringing everything together beautifully. What’s one simple tip or technique you think every home cook should master? Every home cook should master a handful of fundamental sauces. They give a dish depth, balance and personality, and once you have a few reliable sauces up your sleeve, everything you cook feels more confident and complete. @mr.wongsydney 2. In a separate bowl, whisk the eggs, milk, melted butter and vanilla. Slowly pour the wet ingredients into the dry, whisking until smooth. Let the batter rest for 20–30 minutes at room temperature. To cook the crêpes, heat a non-stick pan over medium heat and lightly grease with butter. Pour in about ¼ cup of batter, swirling the pan to create a thin, even layer. Cook for 30–45 seconds, until the edges begin to lift, then flip and cook for a further 10–20 seconds. Transfer to a plate and repeat with the remaining batter. Place the sugar in a wide pan over medium heat and let it melt without stirring, swirling the pan occasionally. Cook until the sugar turns a goldenamber colour. Reduce the heat to low and whisk in the butter — it will bubble vigorously. Add the orange zest, orange juice and lemon juice, then stir to combine. Stir in the Grand Marnier and simmer for 1–2 minutes until slightly thickened. Warm 100 ml of the Suzette caramel in a frying pan over gentle heat until slightly reduced. Add two crêpes, folding them into the sauce and warming them through. Pour in 50 ml Grand Marnier and flambé, cooking off the alcohol. Plate the crêpes and spoon the caramel over the top. Serve with a generous scoop of Chantilly cream. Crêpe Batter Suzette Caramel Sauce To Serve (per portion) Makes 10–12 crêpes (the restaurant serves two per portion) bistroebony Steven Woodburn
10 HOME DESIGN The New Mood: 6 Interior Shifts Defining 2026
Looking for more home design inspiration? For styling tips, interior design trends and roundups of the hottest new furniture on the market, visit sitchu.com.au/home-design 11 Richer hues, grounded materials and wellness-centred living are redefining Australian interiors. With insights from Elle and Alanah Giuliano, the sister duo behind Melbourne interior design studio Twostyle, we explore the six trends influencing the future of home style. Intentional Living “People assume you can’t have a beautiful home when you’ve got little kids, ” Elle says, “but honestly, you can. It just means designing with intention.” Durable materials like stainless steel, clay bricks, porcelain and high-quality laminate now look luxe while withstanding daily life. Earthy tones, forgiving fabrics and sculptural pieces add warmth and personality. The result, Elle says, is “curated, not clinical” — a practical-luxury approach redefining modern family homes. Immersive Colour 2026 is all about atmosphere. “Colour-drenching transforms a room instantly,” says Alanah. “Painting walls, ceilings and trims in the same tone creates an immersive mood… we’re seeing clients become so much braver.” Deep greens, damson, tobacco and wine tones are leading the charge, grounded by warm neutrals and textural accents. This confidence marks both a reaction against ultra-minimal interiors and an evolution toward expressive design. The best part? It’s high impact with a relatively modest investment. Organic Texture Texture is becoming the new comfort cue. “Hotels are influencing residential design in a big way,” Elle says. “If you look at inner-city spaces like 1 Hotel, everything is organic, textural, calming.” Woven materials, handcrafted-feel wallpapers and natural tones bring a soothing, grounded quality to urban homes. Rather than just adding greenery, Elle sees this as “creating spaces that emotionally support people” through tactility, warmth and layered softness. It’s biophilic design, but more intimate and sensory. Modern Metals “Metal is having a huge moment again,” says Alanah. Brass, bronzed finishes, aged bronze tapware and even internal metal cladding are reappearing in refined, architectural ways. “It adds depth, craftsmanship and a bit of drama,” she notes, balancing softness while ageing beautifully. The shift marks a return to timeless craftsmanship and honest materials. Social Spaces At-home entertaining is evolving fast, and every room is expected to adapt. “People want hidden wet bars, zones that convert from family mode to party mode, flexible furniture layouts… and outdoor kitchens are huge,” says Elle. The focus is on creating spaces that evolve effortlessly from casual family living to celebrations. “It’s all about flow and making everyday life feel experiential,” she adds. Wellness By Design “People want wellness integrated into the structure of the home now, not just aesthetics,” Elle explains. That might look like “whole-home water filters, warmer lighting instead of harsh downlights, natural materials, and layouts that prioritise natural light.” As she notes, “people want homes that support energy, mood, sleep and longevity, and they’re willing to invest in upgrades that feel good and do good.” SITCHU MAGAZINE Image Credits: “After the beige-and-white era, people are craving richness and atmosphere” — Alanah Giuliano @simonshiffsays Simon Shiff
