Continuing in the theme of luxury, this week’s recipe comes from Executive Chef Sam Moore from the elevated Frenchinspired restaurant, Atelier, at the Sofitel Sydney Darling Harbour. He shares his indulgent dry-aged Macedon duck breast with fennel purée, nectarine, and spiced duck jus—it’s a real showstopper of a dish. SITCHU MAGAZINE In her 20s and 30s, Sheree Commerford would rent out a quaint seaside inn by the water in Yamba, on the northern rivers of NSW, dreaming that one day it would be hers. Fast-forward to 2021, and in a full-circle moment, she purchased the stunning 1948 weatherboard home overlooking the ocean. “When we bought it, it was strongly suggested that we tear it down due to its age and condition. I think we were probably the only ones crazy enough—and in love with the place enough—to go through the intensive process of restoring and renovating,” owner and project designer Sheree explains of her steadfast vision to create what stands today as Il Delfino, a coastal-cool accommodation with five self-serviced suites. With such a strong connection to the area, Sheree was never going to budge on her determination to lovingly restore the hotel and build a laid-back holiday retreat where surf culture meets Mediterranean vibes. “Having grown up in the area and being a part of the community, the property was very well known,” she recalls. “Like so many people, it had been a loved part of the landscape in Yamba, and I’ve been drawn to it for as long as I can remember.” The creative force wasted no time restoring the property, which took over two years. Sheree and her team worked closely with local builders, metalworkers, artists, friends, and family to maintain the authenticity of this 1940s oceanfront cottage while giving it a fresh, surfie-inspired twist. “It was a learning process for me, as I had never done anything like this before,” Sheree admits. “The more I understood, the more the process reflected that growth.” Il Delfino has five suites inspired by iconic Italian coastal destinations: Cinque Terre, Ravello, Portofino, Ischia, and Scopello. The design of each room embodies the romance and timeless beauty of its namesake, with carefully chosen materials, handcrafted details, and custom furnishings creating the ultimate sanctuary for guests. Each suite is a sunlit, welcoming space featuring custom-built furniture and dreamy colour palettes that evoke the spirit of coastal living. Vintage pieces handcrafted Di Lunedi tiles, ceramics by Lisa Lapointe, and murals by artist-in-residence Heidi Middleton add character and warmth. But, for Sheree, she says the most magical part of the rooms is their expansive ocean views. “Guests are consistently awestruck by the never-ending vistas of the Pacific Ocean. It’s truly the heart of the experience at Il Delfino—that sense of connection to the sea and the natural world right outside your window,” she beams of the outlook. If guests can tear themselves away from their suites, the Lido terrace is ideal for a slow morning coffee, lazy sessions in the sun or a golden-hour tipple. Just steps from Il Delfino, Yamba’s trio of beaches—Main Beach, Convent, and Pippi—beckon for a swim, surf, or seaside stroll. For Sheree, the outdoor shower is the perfect post-swim indulgence. “Standing there, framed by frangipani leaves, with the stone path leading to the bungalow door and a glimpse of the sea—I feel completely at peace, at home,” she shares. Il Delfino has a selection of soft boards from Mick Fanning’s line for guests keen to catch a wave, whether they’re beginners or seasoned surfers. Or, for those who prefer to stay on land, private in-room massages are available for a truly relaxing experience. Staying at Delfino is all about slowing down and tapping into the nostalgia of a childhood holiday by the beach. “This reflects the Italian philosophy of alla spiaggia— which means ‘to the beach’ —a timeless rhythm that infuses the property,” Sheree explains. “We bring a laid-back vibe to life with warm, oldschool hospitality, making guests feel like family. The experience was designed to be relaxed and memorable. Think barefoot wandering, leisurely days by the sea, and restful evenings. It’s a place where the beach is always the heart of the experience, and life slows down in the best way possible,” she shares. Atelier draws inspiration from the flavours of the South of France. How do you incorporate this influence while showcasing Australia’s fresh produce? We use seasonal produce in the Provence region that matches the seasons here. Local, sustainable suppliers are our key focus. How does Atelier approach sustainability? Sustainability is integral to our brand and a personal passion of mine. Our food waste program, Pulpmaster, converts food waste to energy and compost. For dinner inspiration, food trends and roundups of the most delicious new recipes, visit sitchu.com.au/recipes Explore More Recipes 09 Ingredients Method DRY-AGED DUCK 4 duck breasts, dried in the fridge for 10 days FENNEL PUREE 200g finely sliced fennel 10g fennel fronds from the top of the fennel bulb 30g spinach 10g unsalted butter 100ml cooking cream, salt to taste FRESH YELLOW NECTARINE 2 yellow nectarines 10ml fig balsamic 10ml olive oil BROWN DUCK STOCK 500g duck bones 500g duck wing 400g eshallot cut into 3cm cubes 2 large carrots cut into 3cm cubes 2 sticks of celery cut into 3cm cubes 50g tomato paste 2 sprigs thyme 2 bay leaves 2g coriander seeds roasted 2g fennel seed roasted 1L water SPICED DUCK JUS 500ml reduced Duck stock 100g roasted duck wings 2g fennel seed roasted 2g coriander seed roasted 10ml sherry vinegar 10g brown sugar 100g eshallot cut into 2cm cubes 50g large carrots cut into 2cm cubes ½ stick celery cut into 2cm cubes 2 garlic cloves 2 sprigs of thyme PLATING 1 sprig of fennel fronds Age the duck breast in the fridge beside the fan, uncovered for 10 days. FENNEL PUREE Finely dice fennel at 0.5mm. Blanch fennel fronds and spinach in boiling water for 10 seconds and refresh in iced water. Melt butter in pan and sweat fennel with no colour until translucent. Add cream and reduce until the fennel is very soft. Blend fennel on high speed, adding spinach and fennel fronds. Pass through a fine sieve over a cold bowl and place on ice. Season when hot to taste. FRESH YELLOW NECTARINE Cut nectarines into 1cm cubes. Toss with balsamic and olive oil and set on the side. BROWN DUCK STOCK Roast bones and wings at 180 degrees for about one hour or until golden brown. Roast eshallot, carrots and celery until they have a nice colour. Add tomato paste and cook out. Add aromatics and sweat off. Cover with water. Simmer for 4 hours; do not boil. After four hours, strain the stock through a mesh sieve and reduce by half. Set aside. SITCHU MAGAZINE SPICED DUCK JUS Roast Duck wings at 180 degrees for about an hour until golden brown. In a pan, roast off all vegetables and aromatics until golden brown. Add sugar to the pot and caramelise with the vegetables. Deglaze with sherry vinegar and reduce to a syrup-like consistency. Add the reduced duck stock and reduce the sauce by half until thick and glossy. Pass through a sieve. Set aside to serve. PLATING Cook duck breasts skin side down for 8-10 minutes on low heat (start with a cold pan). Put duck breast in the oven for a further three minutes. Rest duck breast for 10 minutes. Heat fennel puree and quenelle onto a plate. Slice each duck breast lengthways into four slices and arrange on a plate. Place cubes of nectarine over sliced duck. Place fennel fronds on top to garnish. Bring the finished sauce to a boil and sauce the dish in between the puree and breast. Serve immediately.
