FOR THE FOODIES Maddie Begala has redefined the genre of ‘how-to’ recipe content. Rejecting the notion that recipe instructions have to be straightforward and boring, she injects her trademark comedy, dance moves and scene-setting to deliver recipe content that entertains via her social platform, Pinch of Maddie. She’s also been lucky enough to cook in some pretty cool spots around the world, from the remote Himalayas to her twin sister’s apartment in Hong Kong; and it’s inspired some fun experimentation and flavour combinations along the way. What are your favourite flavours to cook with in the warmer months? I lean towards fresh and vibrant flavours as this is the best time of year to show these off with the abundance of in-season fruits, particularly sweet and juicy tropical fruits like mangoes and pineapple, or tart stone fruits. These are super versatile – adding the perfect pop of sweetness to salads, blitzed into dressings, marinades or cocktails! In the thick of BBQ SZN, the vibrance of these ingredients also help to balance and compliment the smokiness of charred meats. Do you have any tips for hosting a fun outdoor dinner party with friends? • Aerogard on hand at all times. • Create the mood with cute table lanterns or fairy lights – it’s bound to get dark and you don’t want this to kill the party. • Don’t use disposable/paper plates – these instantly downgrade the vibe. Stick to the real deal. • Curate a menu of dishes that require minimal cooking or can be pre-prepared like hearty salads or sides. • Light up the BBQ for some extra theatre and aroma. • Don’t overcomplicate it – what you carry outside must be carried back in so keep it simple. 5 Minutes with Maddie Begala Dietitian and Product Developer I draw inspiration from restaurants to local markets, grocers to overseas holidays - nowhere is off limits!
